Coffee Granita
Description:
Granita is frozen espresso crystals. The Italians usually relax after with this refreshing coffee dessert.
Serves 2 to 4
Ingredients:
¼ cup plus 2 tablespoons (2 shots) freshly brewed espresso
2/3 cup hot water
2 tablespoons sugar or more to taste
Method:
Combine the espresso, water and sugar. Stir to dissolve the sugar and taste. The flavor should be semisweet. Let cool to room temperature
Pour the espresso mixture into a 9 by 5 inch loaf pan and place it in the freezer. After 30 minutes remove the pan from the presser and stir to break up the ice crystals. Return to the freezer and repeat every 30 minutes over a period of 1 ½ to 2 hours, until ice acquires a firm smooth consistency. (This isn’t as tedious as it sounds. In fact, it is interesting to see how the ice crystals from and turn almost fluffy.
To serve, scoop into glasses or demitasses cups. For best results, serve the granite the day you make it.
